This is a Mackaion Cake adaptation from a recipe in Mary Mason’s cookbook.

Ingredients

  • 1 lb of almonds
  • 1 lb of sugar
  • 3 egg whites
  • water

Method

Step 1

Blanch the almonds and mix in with some water

Step 2

Mix in the sugar and beat with the egg whites until a broth forms

Step 3

Continue mixing until a stiff paste emerges

Step 4

Add the mixture into a baking pan

Step 5

Grate sugar over the mixture

Step 6

Bake in a 250F oven until the mixture sets
